Decoding AGEB, AGB, and AGS

Cardamom is known as the “Queen of Spices,” and it commands a queen’s ransom in price. However, not all green cardamom is created equal. When browsing export quotes, you will see acronyms like AGEB, AGB, and AGS. Understanding these grades is crucial to ensuring you don’t overpay for a grade you don’t need—or worse, underpay for a grade that doesn’t meet your quality standards.

The Indian grading system, primarily based on the Alleppey Green standards, categorizes pods by diameter size and weight. Here is your definitive guide.

1. AGEB (Alleppey Green Extra Bold)

  • Size: Pods are 7mm and above in diameter.
  • Weight: Minimum 435 grams per liter.
  • Characteristics: This is the premium export grade. The pods are large, mature, and packed with seeds (which contain the oil). The color is a vibrant, uniform deep green.
  • Best Use: High-end retail packs, gift boxes, and whole-spice culinary uses where visual appeal is paramount (e.g., biryanis where the whole pod is visible).

2. AGB (Alleppey Green Bold)

  • Size: Pods are 6mm and above.
  • Weight: Minimum 415 grams per liter.
  • Characteristics: These pods are still “Bold” and fully mature but slightly smaller than the Extra Bold variety. They retain the excellent aroma and oil content of the AGEB but at a slightly more competitive price point.
  • Best Use: General retail, catering, and restaurant use. This is the “standard” high-quality grade for most export markets.

3. AGS (Alleppey Green Superior)

  • Size: Pods are 5mm and above.
  • Weight: Minimum 385 grams per liter.
  • Characteristics: These are smaller pods. While they may lack the visual grandeur of the bold grades, their flavor profile remains potent.
  • Best Use: Grinding into powder, extraction for oleoresins, or use in Masala Chai blends where the pod size is less important than the flavor.

Why Does Size Matter?

It’s not just about looks. A larger cardamom pod (7mm+) generally indicates the fruit was allowed to fully mature on the plant. Mature pods have fully developed seeds with the highest concentration of volatile oils (1,8-cineole and terpenes). Smaller or immature pods may have fewer black seeds and more white/immature seeds, leading to a weaker aroma.

A Note on Color

The term “Alleppey Green” refers to the specific curing method used in Kerala that locks in the chlorophyll. If you see yellow or pale pods, they may be sun-dried rather than kiln-cured, or they may be old stock.
